A FLOUR SERMONETTE


T seems rather strange, considering all the wonderful kinds and varieties I of foods which constitute the human diet, that there should be one article - bread-so much more important than any of the others that it never even appears on printed bills of fare. But there is a reason for this, just as there is for everything else in the world, and it lies in the fact that bread is made from flour, and flour is made from wheat, and wheat contains all the elements necessary to sustain human life.


From this it appears that that flour is best which is milled in such a way as to preserve the largest per cent of the albuminoid matter contained in the wheat.


The makers and sellers of bleached flour and their apologists excuse the prevalence of this form of decep- tion in flour on the ground that such goods are sold "in response to a demand for 'cheap stuff'."


As Mark Twain would say, "This is important if true, but it isn't true." The fact is, there's about as much demand on the part of the consumer for bleached. flour as there is for embalmed beef, renovated butter, or any other food cheat-there's none.


Our activity in the cause of honest flour is not prompted by anxiety lest we shall lose trade by not in- stalling bleaching machines, there will always be flour jobbers and grocers who want good goods, and to whom a low price is not an irresistible bait; we shall go on

supplying them. There will also be plenty of dealers who demand cheap stuff either because they're cheap themselves, or because they don't know any better. We may not reform them, but we are glad to enlighten them. Our label will do both-to the benefit of their customers.
