THE EUREKA ACADEMY AND BUSINESS COLLEGE


This popular institution was established in the fall of 1886 by the present proprietor, Prof. Neil S. Phelps. The growth and success of this institution, from the date of opening to the present, has been phenominal.


The comparative isolation of Humboldt county and the inconvenience of communication with other parts of the state have probably had something to do with the remarkable growth of the school, but the principal cause that has contributed to its success has been the enterprise and energy of Prof. Phelps. This gentleman had been for ten years an active teacher of Humboldt county, four years of the time serving as County Superintendent of Schools, prior to laying the foundation of his private school. He believed the people of Northern California needed and would support a really first-class school, and accordingly he engaged a a full and competent faculty, and, drawing largely upon his own private means, fitted up the school with all the necessary apparatus and help to that end. That he was not mistaken was soon demonstrated. The accommodations of the school soon became inadequate for the attendance, and a new building had to be erected. During the year that followed this, too, overflowed. Up to this point Prof Phelps had more than doubled the capacity of the school and had met all the expense himself, using his own private means for that purpose. More room was absolutely imperative, and through the influence of the friends of the school the owners of the school property, a joint stock company, came to the rescue and the present fine commodious building was the result. Students from all parts of Northern California flocked to the school, and for two years it has ranked as the largest private boarding and day school in California north of San Francisco.


PLAN AND SCOPE OF THE SCHOOL


The school includes five departments, viz: Preparatory, Grammar, Academic, Normal and Business. The work in the Academic department includes several distinct courses of instruction which are calculated to prepare students for every department of the State University. These departments are not "sandwiched " one upon another in the same classes, as is the case in many private schools, but each department has separate instructors, all skilled in their own special work.

THE PREPARATORY DEPARTMENT


This department includes the work ordinarily covered by Primary and Intermediate grades in the public schools. The principal of this department is a Normal graduate and a skillful primary teacher. This department meets the demands of those who desire more thorough and careful training than can be had in the over-crowded public schools, and grows in popularity each year.


THE GRAMMAR DEPARTMENT


Is in charge of a highly competent instructor and prepares students more thoroughly for admission to the other departments of the school.


THE ACADEMIC DEPARTMENT


Prepares students for admission to any course in the State University, and also provides a general English course for those who do not intend to advance to strictly collegiate or university work. The course of study in this department is modeled after that of the best high schools in the State. Students are prepared here for admission to any department of our State University, Harvard, Yale or Michigan Universities.


THE COMMERCIAL DEPARTMENT


This is the popular department of the school. From the start it has enjoyed the most marked popularity. The course of instruction includes Book-keeping, Commercial Arithmetic, Applied Grammar and Correspondence, Commercial Law, Rapid Business Penmanship and Spelling. The great aim in this department is the training of young men and women for business. The "Actual Business System," introduced into the school by Prof. Chas. L. Ellis, now of the S. F. Business College, forms the basis of all training in the Science of Accounts. So thorough and practical has been the training in this department that scores of young men in Humboldt county have been able to step from the school-room into lucrative and responsible positions, and not one of them so far has lost a position by reason of incompetency. The benefit that this department of the school has been to the score of young men and women who have taken the Commercial Course cannot be estimated.


THE NORMAL DEPARTMENT


There are about one hundred school districts in Humboldt county, the teachers in which are, for the most part, residents of the county. But owing to the inconvenience and expense of attending schools in distant parts of the State, but few have been able to secure professional training. The Normal department of the Eureka Academy was established to afford teachers and those who contemplated teaching an opportunity to secure this training at home. From the inception of the school this department has been well patronized, and to-day very many of the teachers professionally engaged in this county, have spent one or more terms at the "Academy Normal." A very large proportion of the teachers who have succeeded at the county examinations during the past three years, have been prepared at the Academy.

The Normal department is in charge of experienced Normal teachers, and the work done compares favorably with that of any school in the State. Not only are students thoroughly drilled in the principal English and Scientific branches, but careful training is given in Pedagogy, the School Law of California and the practical duties of the school room.


MUSIC


Thorough instruction in both vocal and instrumental music has always been a special feature of the school. Only proficient artists and skillful instructors are employed as teachers.


SHORTHAND, TYPEWRITING AND TELEGRAPHING


Instruction in Shorthand, Type-writing and Telegraphy are also special features of the school.


One of the most pronounced features of the school is to surround the students with the pleasant and refining influences of a well ordered home. Students and members of the faculty occupy the same building, meet at the same table for their meals, and are intimately associated together as members of one large family. Everything combines to make the school a constant object lesson in politeness and good manners to those who have been prevented from acquiring the manners and customs of polite society.


EUREKA DAIRY


The supplying of milk to every large place is always both a necessary and important branch of trade In this respect, Eureka is peculiarly fortunate, for both at private houses and at hotels the milk supplied is pure and good, cream rather than the weak apology that serves for milk in so many cities. Mr. S. F. Pine's milk and dairy farm at Bucksport is the source from whence a large portion of the milk consumed in Eureka is obtained. The milk ranch comprises 350 acres, chiefly of the fertile alluvial sediment underlaid by clay that forms the rich bottom lands that surround the bay. When purchased by Mr. Pine 10 years ago it was subject to overflow on the occasion of high tides. By dyking the land, however, and clearing up the scrub and drift wood that covered most of it, there was left a magnificent stretch of splendid soil. The house occupies a lofty bluff, commanding a fine view of the harbor and the ocean, and is an old-fashioned but comfortable farm home, with orchards and gardens about it. At the foot of the bluff are the stables, very large and the most complete and well suited to their use of any ever seen. In them are stalls for 116 milch cows, with feed troughs and other arrangements so that they can be very easily fed. Above is stored the hay and grain, the former being hoisted in by hay derricks, and the latter run by chutes to any point. The horse stable is large and ample, there are plenty of farm implements all of the newest makes, and in other respects everything is complete. The cows are fed entirely on hay or clover, which is cut for them fresh daily during the season, with which is given a mash of bran and shorts, thus insuring

wholesome and healthful milk. As soon as a cow shows signs of deterioration from any cause it is sent out to the pasture where are the dry cows and other unavailable stock. The cow pasture is large and easily accessible to the barns and stables, amply supplied with shade, hillside and water, and provides abundant exercise for the cows during the day. In another great field at a little distance are the yearling heifers and a few valuable dry cows. These are splendid animals, for Mr. Pine is grading up to Holstein and Durham, having imported a bull each of pure breed. These fields are seeded to red clover, which is found the most suitable for this soil. They answer for pasture during seven months and during the remaining five yield two cuttings, in all about five tons to the acre. This may seem prodigious, but is the fact, the genial climate and fertile soil being the causes. This year Mr. Pine cut 300 tons of hay from his land, and in another season will have 150 acres in clover. The milk house is also a model in its way, with its rows of shining cans and complete adaptation to the purpose. There are also arrangements for butter-making, all sweet and clean and neat as possible, constantly in use, all the milk produced being supplied to the city. Mr. Pine is a native of Vermont, but resident of California for 23 years, and being still but a young man, has grown up with the broad and liberal ideas of a Californian. He came to San Francisco in 1867 and obtained his first employment in that city. He afterward went to farming in Solano county, but striking two dry seasons in succession, he was glad to sell out and start in the world afresh somewhere else. Recognizing the great advantages enjoyed by this portion of the State in its abundant rainfall, he came up here in 1874, secured the land he now owns and set about its improvement. It would be hard to find a better instance of what may be done by the man of energy and honesty in Humboldt county, than the history of Mr. Pine since he has been here. Although possessing less than $1,000 when he came here, he managed to puschase the 350 acres of his ranch, paying for it the sum of $4,500. To-day, partly because of the great natural increase of values, and partly because of the extensive improvements made, it is worth 20 times that amount. Mr. Pine is also the owner of considerable property in addition to the home ranch. He is half owner of the Eddy tract in Eureka, besides other city real estate, and he is the possessor of several valuable pieces of timber land. Mr. Pine has a business of large proportions that is constantly growing. He is a gentleman of great personal popularity. There seems no danger of a successful result in his case, as he is a stirring, energetic man, known by everybody and possessing every characteristic of an efficient man, promptness, decision and unquestioned probity. About one year ago Mr. S. F. Pine paid a visit to the Green Mountain State (his boyhood home), where he was united in marriage to Miss Patton, a highly refined and cultured lady. Mrs. Pine posseses affability and courtesy in the firmest sense of the language. Though but a brief resident of Eureka, Mrs. Pine has nevertheless gained a host of friends, and society taxes her spare time to the utmost. These social enjoy ments are warmly appreciated by her husband. We predict a Sunny Future for the Pines.

RUSS MARKET


In 1853 the late Hon. Joseph Russ established the Russ Market. Since his death the business has been successfully conducted by his widow, Mrs. Z. Russ, and his two sons, Ira A. and W. N. Under the experienced and practical management of Mr. N. Bullock many improvements and additions have been made. The market proper has been divided into four departments and the whole business systematized. All of the departments are connected with a central office by a cash railway system, thus facilitating the prompt rendering of accounts and correctness of bills.


THE NEW SLAUGHTER HOUSE


Is situated on the marsh, alongside the E. R. & E. R. R. track, about a quarter of a mile back from the old slaughter house on the Bucksport road. This is the most complete establishment of the kind on the coast, and although not as large as some in other cities of the State, is the only thoroughly equipped slaughter house west of Chicago. The buildings occupy a space of about one and one-half acres. Each department of the establishment is provided with all the latest machinery for carrying . on its particular kind of work. The main building contains the slaughtering-room, pork-packing department, the engine and boiler-room. Connected with this building by a covered passage-way is another building 30x50 feet, used as a cooling and storage room for the dressed meats. This building is constructed rodent and vermin proof, and is open on two sides, the openings being protected by fine wire screens and also by large swinging doors which can be shut in inclement weather, thus completely closing the building. The interior is partitioned into two rooms-one for the meats for the market and the other for pork for the packing department. The pork room has a sheet-iron pipe coming up through the floor, which is connected with a blower in the engine-room. By means of this apparatus a current of cold air can be forced into the room facilitating the rapid cooling of the pork for use in the packing-room. The slaughter-room occupies a portion of the west half of the main building, and contains four dead-pens, each provided with a windlass overhead, operated by steam; by which the cattle are drawn to the rings, one being placed just in front of each pen. By this means when killed they fall within the pens, which are so arranged that all bruising of the carcasses is prevented and they are in a convenient position for future operations. After killing they are hoisted to the hooks by the steam windlasses and from that moment are not lifted or carried by hand, until they are unloaded as dressed meat at the market. This is effected by means of the hooks being attached to wheels which travel on a hanging track, fastened to the beams overhead.
