VEGETABLES.


Do not put salt in the water when boiling corn or it will harden the milky little kernels.


To boil corn in the husks strip off the outer ones, turn back the inner ones and remove the silk, then turn them over the corn again and tie at the top. Plunge into boiling water for ten minutes and serve in the husks to keep the corn hot.


All vegetables should be put in freshly boiled water and quickly brought to the boiling point again. If left to steep in hot water before boil- ing it toughens them, and destroys color and flavor.


An open, shallow vessel kept on the back of the stove filled with hot water and several stew- pans or large tin cups with covers and handles fitted in, are useful to hold cooked dishes desired to be kept hot. There is no better way of keeping vegetables, etc., warm, and at the sametime preserving the flavor. Tin cups or saucepans with tightly fitted lids set in a dripping pan filled with hot water would answer the purpose.

If water in which vegetabics are to be cooked boils a long time before they are put into it, it loses its gases and the minerai Ingredients are deposited In the kettle, making the water flat and tasteless; the vegetabics wiii not look green nor have so fine a flavor.


Vegetables cook just as quickly when the water is merely boiling as when it boils very hard. By remembering this, much fuel may be saved, and the kitchen kept many degrees cooler.


Do not throw celery tops away; dry them in a cool oven, keep in a covered jar and use for fla- voring soups and gravics. When the flavor is strong enough dip them out.


When potatoes grow too soggy for use, bolled rice is a good and cheap substitute.


Make a muslin cover for your thumb to avoid cutting the skin when paring potatoes and ap- pies.


Beef suet is good for frying potatoes. Small pieces thrown in the pan will keep yielding fat as needed, and are as sweet as nuts when served with the potatoes.


Celery may be kept fresh a long time by wrap- ping in a heavy cloth wrung out of cold water, if kept damp.

would be better steamed. Long and hard boiling makes them tasteless. If young, they should boil gently fifteen or twenty minutes; then add salt, pepper and butter or cream just before taking from the fire. Their own flavor is finer than any you can add to them. This flavor can be deepened by boiling the hulls first in the water in which the peas are to be boiled.


If peas are not very fresh or young add a tea- spoonful of sugar to the water in which they are boiled.


Though love is supposed to enter a man by way of his heart, it often leaves him by way of his stomach if his wife serves him too many poorly- cooked meals.


FRUIT DRYING A GREAT INDUSTRY.


The packing and preparing for the market of the vast quantities of dried fruit shipped from California and other fruit raising States is in- teresting to all those who live in localities where little or no fruit is raised for the mar- ket, and where none is dried.


Picking and marketing the immense fruit crops in California give employment to many thousands of people throughout the summer months. The picking is done by men but the packing is done almost entirely by women and

girls. Cherry packers become very expert, the swiftest workers earning as high as $2.50 per day. Ordinary packers make from $1.25 to $1.75 per day.


The apricot crop gives employment to more than the cherry crop, partly because there is a larger acreage of apricots than of cherries and partly because the bulk of the crop is dried.


The "cots" as they are called, are cut smoothly in half, the pits taken out and the halves laid, cup side up, on trays for drying. Before being put out in the sun to dry the fruit is subjected to the fumes of burning sulphur for about thirty minutes. This bleaches the fruit, kills all germs that may have found lodgment on the ripe fruit and hastens the drying.


A great many fruit growers have very exten- sive drying plants, but the process of drying is about the same in large and small plants. After the trays of apricots are filled, each tray is sprinkled with salt water. This fills the cups with juice and the salt helps the sulphur to take effect. The trays are piled on to cars which run on tracks through the packing sheds, and are taken by the Japanese workmen to the sul- phur house. This has closet compartments just large enough for the car to fit in. The sulphur

Peaches are dricd through much the same process as apricots. Pruncs are not sulphured as are peaches and apricots, but before being placed on the trays to dry they are given a bath in hot lye water.


Before being sent to the retailers the greater part of dried fruits are sorted, washed and pressed into boxes at the packing houses. This gives the fruit a finer appearance but people who live In the frult regions prefer it just as it comes from the dryer.

A POP CORN DELICACY.


Run the pop corn through a food chopper with coarsest wheel on. Then prepare molasses as for making pop corn balls and when the mo- lasses cooks until it threads from a spoon, flavor with a teaspoonful of vanilla and stir it well Into the pop corn. Turn the corn into buttered pans and cover with buttered paper so that weights can be placed on it. When pressed, it can be cut in squares.

Take one package of Diamond slate dye and dissolve In a pint of bolling soft water. Red, green, purple, blue or yellow ink can be made by taking ten gralns of the desired color of ana- Ilne and mixing with one ounce of soft water.

PAPERING WIIITEWASIIED WALLS.


It is generally known that paper will not stick to whitewashed walls. But if the wall is first washed with vinegar, the paper will stick all right. After washing with the vinegar, give the room a good airing. Acid vinegar is as good as cider vinegar for washing walls, and costs less. A half gallon will go a long ways. It is good for any wall to wash it with vinegar before papering.


TO REPAIR GLASS.


Alum dissolved in a dish over the fire makes a good cement for repairing glass or broken dishes. Try it. It will not show on glass.


DAMP CELLARS.


Damp cellars may be made drier and purer by placing in them an open box of fresh lime.

LINIMENT FOR RHEUMATISM.


Ten cents' worth of sweet oil with equal parts of turpentine and ammonia put together in one bottle. Shake well before using.


BURNING SULPHUR IN POULTRY HOUSE.


Sulphur is an excellent disinfectant when burned in the poultry house, but as sulphur melts and smothers the flame, it is often difficult to burn it satisfactorily. One way to do it is to dissolve one-half pint of pine tar and one-half pint of turpentine in a half gallon of kerosene in an open vessel. Soak in this solution large corn cobs until they are well saturated, then take them from the solution and dust on them all the powdered sulphur that will stick to the cobs; stick a stiff wire in the large end of cobs and push the other end in ground in center of the house. Now remove all the combustible matter inside and set fire to the cobs; close all the doors and other openings and allow the fumes to penetrate every nook and corner, and the lice and mites will be destroyed.


MOLES.


The best remedy to make moles leave your garden is to soak corn cobs in coal oil and place in their runs.
