"Talking about people heing pecul- iar," remarked an old trainer out at the Bennings race track the other day, "if there is anything more peculiar than race horses I haven't come neross it. Race horses, I mean thoroughbreds of course, are as full of whims as-well, aa a woman, and you've got to humor them just the same as women. I re- member one I trained some years ago -a horse, I mean, of course. He was n great one, nnd few of them could show him the way in. Yet that fel- low couldn't he exercised in preparing him for a race nnlees the boy on him was rigged ont in the stable's colors. You couldn't fool him about it, either. for he knew just as well whether the boy was fully dressed as we did, and if he wasn't you couldn't get the old fellow on the track. But when the boy put on the duds, why, the old horse would go ont and do all that was want- ed of him," says the Washington Star. "Then there was another that I had that wouldn't associate with other horses, and the consequence was that we had to train him hy himself. Actu- ally had to wait every time until every other horse was off the track. Then, when he had the whole track to himself. we had all we could do to get him off when we thought he had been given enough. This same one we had to send to the post hy himself, and when we got him there we had to keep him awny to one side, off from the hunch. An- other one I had was just the opposite, for he wouldn't go on the track, either for exercise or for a race, unless he was accompanied by another horse.


"Then there ia the horse that runs true as long as he is in the lead, hut will stop and give up the fight the mo- ment another one gets near him or passes him. On the other hand, there ! is the horse that tries all the harder aa long as he Is behind. Then there is the horse that will not try if the jockey has a whip, while there are others that will not try noless they are given both whip and spurs. But, as I said, they are very peculiar, and have as many whims as mankind."

Subnitrate of Bismuth and Cttrle Actd Will Keep It Sweet and Clear.


This year's large apple crop has made cider abundant and cheap, and by reason of processes discovered in re- cent years oider made early in the fall when apples are cheapest remains pal- atahle all winter. With this improve- ment in the method of preserving ci- der has come a change of theory as to the unwholesomeness of the beverage. Twenty years ago cider was denounced as a dangerous drink; now it is recom- mended especially to persons suffering from stomach disorders, and to those of a rhenmatic or gouty tendency.


The French have made a medien1 study of cider, doubtless partly because it takes the place of wine in parts of France, and the result of such study has led the French experts to the conclu- sion that the presence of malic neid nnd of tannin in cider makes it of great hygienic valne. Some dyspeptics can- not drink it, but in some forms of in- testinal trouble it is helpful. It is reck ommended especially to gonty per- .ons.


To be wholesome, however, cider must be in good condition, and es- pecinlly it must not he too hard. The old method of putting up cider in a strong and seenrely corked hottle. along with three or four raisins and a tahlespoonful of sugar to a pint, is still pra ticed in this country, and the re- sult is a delightful beverage with all the effervescence of champagne; but this method of preserving cider is ex- pensive and troublesome. The French have discovered a cheaper method, and that is to place in cider that is to he pre- served from hardening a small quantity of the subnitrate of bismuth. It is


found that a partly consumed barrel of rapidly hardening cider may thus he preserved for many months. The hard- ening process is not altogether arrest- ed, but it goes on very slowly.


The French have also discovered a method of preserving the bright trans- parency of cider. Most cider when ex- posed to the light becomes clouded. und brown. This change is due to the chemical action of tannia nnd some- tinaes to iron contained in the cider. Save in nppearaoce the beverage is none the worse for the change, and indeed a cider that quickly turns hrowu is regarded as especially wholesome for some persons hecause of its heing rich in tannin. To preserve the clear heau- ty of cider, however, the French use cit- ric acid in quantities varying with the natural acidity of the cider, nsnnlly about GO graias to the gallon.
